Cibus and ALMA Caseus coming soon
Cibus, the food exposition taking place in Parma from May 7th to 10th, is approaching, and so is ALMA Caseus: the National contest dedicated to cheese professionals (producers, refiners, and similar) and to cheeses, the real protagonists of Italian cheese production. ALMA Caseus, directed by Renato Brancaleoni, one the most famous Italian cheese refiners, was acknowledged with the patronage of the Ministry of Agriculture and Forestry.
Presently, ALMA is collecting the application forms for the competition: due to the large number of applicants, the deadline to apply was shifted to April 23rd.
ALMA Caseus final act will be hosted by AICIG – Italian Association of Geographical Denomination Consortiums, at their stand inside Cibus – International Food Exposition. On Wednesday May 9th, in the afternoon from 3:30 to 6:30 pm, the professionals’ contest will take place and include the following tests: organization of a window with 15 cheeses, selling performance, multiple choice test, blind tasting, professional tasting and evaluation of five DOP cheeses chosen by the Jury, professional cutting of Fiore Sardo DOP and presentation of a cheese chosen by the competitors.
The following day, cheeses will be the real competitors, for the Jury will declare the best products for each category, based on different criteria such as production scale, origin of milk, type of raw material (cow, buffalo, sheep, goat milk, or a blend) and a possible heat treatment applied. The three cheeses receiving the best reviews and marks will be awarded with “Gold Medal”, “Silver Medal”, and “Bronze Medal”.
During Cibus and ALMA Caseus, the School will be managing an educational bar: visitors will be guided through a tasting experience, with different varieties of Angelo Poretti beers. On the behalf of AICIG, ALMA will organize and manage the refreshment service.
