Ernesto Iaccarino, an exceptional teacher at ALMA
On last December 13th ALMA Food and Beverage Manager students were given a special class by a special teacher: Ernesto Iaccarino, son of Chef Alfonso, and chef at “Don Alfonso 1890” restaurant, that was recently confirmed its two Michelin stars.
Ernesto Iaccarino (born in 1970) started his class at ALMA by describing his restaurant and the location in Sant’Agata sui due Golfi, the very heart of Sorrento peninsula. Together with his brother Mario, Ernesto is the youngest heir of a whole dynasty who keeps on cooking from the 19th Century.
“Don Alfonso 1890” is presently collaborating with seven of the best hotels in the world, and consulting is a basic concept for the Iaccarino family. Ernesto focused on education and training too, based on his degree in Economics and Trade, issued by “Luigi Bocconi” University in Milano in 1999.
Right after he graduated, he worked for two years at PricewaterhouseCoopers (PwC), one of the most important societies for auditing, legal consultancy and advisory services. His father’s passion for cuisine called him back to Sant’Agata sui due Golfi, and convinced him to take up the restaurant; he’s therefore a manager, who turned to cuisine, and did it successfully.
While talking to ALMA students, Ernesto Iaccarino stressed the importance of staff motivation and passion: passion is the “spur” to do one’s job with enthusiasm and devotion, what minimizes problems and labor.
