- Food & Beverage Manager
- Holders of diplomas from Cookery, Baking or Sommelier courses with around 2 years’ practical experience
- Food & Beverage professionals with significant work experience
An initial selection of suitable candidates will be made based on their curriculum vitae. In the event that their training meets the necessary requirements, candidates will be asked to sit an admission test followed by a motivational interview to attend the course.
The course timetable has been designed to accommodate those who work.
850 hours, for a total of 9 months, split into:
- 300 hours of lectures, practice sessions and tasting workshops
- 200 hours of distance learning
- 50 hours of didactic outings
- 300 hours internship
Residential Phase (6 months): from 12 September 2011 to March 2012
Lessons will be held on Mondays and Tuesdays from 10.00am to 5.00pm at ALMA’s headquarters at the Reggia di Colorno. (During lessons students are expected to dress formally)
Distance Learning
During the residential phase, a distance learning system will help students round off and enrich their skills.
Didactic outings will be arranged to visit leading sector companiesInternship (2 months, March - April 2012)
The internship will take place in organisations linked to the world of collective and commercial catering.
Final Examination (May 2012) with presentation of a piece of work done during the course and the issuing of the Food & Beverage Manager Certificate.
€ 6,900.00 + 21% VAT
Registration is subordinate to the successful passing of a selection test and a motivational interview. To sit this test, the candidate is asked to pay €500.00 + 21% VAT (a total of €600.00)
In the event of passing this test, the candidate will be considered to have been accepted for the course in question, and the sum paid will be considered a deposit on the total amount due.- 1st instalment: €500.00 + 21% VAT to sit the selection test
- 2nd instalment: €1,500 + 21% VAT course registration fee
- 3rd instalment: €2,900 + 21% VAT by the starting date
- 4th instalment: €2,000 + 21% VAT within the first 3 months of the course

- Food & Beverage legislation
- The culture of the product and the environment
- Management of human resources
- Management of a Food & Beverage enterprise
- Marketing and customer orientation
