Italian Modern Pastry Program

The program aims at teaching the fundamentals of Italian modern Pastry in its regional variations with theory, demonstrations and training classes.

This course starts from the fundametals of pastry: for this reason, with the full support of the Pastry Teachers during the whole program, it is possibile to attend the course even without any experience in this sector.

Spend two months at ALMA headquarters in Colorno (PR) and learn the authentic Italian pastry from acclaimed chefs. Then complete this lifetime experience with a 3-month internship in the pastry section of a restaurant, hotel structure or pastry lab in a in one of the 20 Italian regions.

Lessons will be held in English

Professional Certificate issued:

“Professional Pastry Chef” of Italian modern pastry.
(Final exam mandatory to achieve the certificate)
Requirements for admission:
  • Proficient knowledge of English language
  • At least 18 years of age
  • Great motivation and passion to start a professional path in pastry
  • A first experience in the sector is welcome, but it is not mandatory to attend this course, since the program starts from the pastry fundamentals.

Structure:

One edition a year, 5 months each: a 2-month in-school phase in ALMA headquarters in Colorno (PR) and a 3-month internship in the pastry section of a restaurant, hotel structure or pastry lab in a in one of the 20 Italian regions. At last, a final project on regional pastry.
